Bumbu Gulai: The Daily Curry Base

Overview

Bumbu gulai is simpler than bumbu rendang — it is the EVERYDAY spice paste for coconut curries. The formulation: shallots, garlic, turmeric, galangal, lemongrass, candlenut, chilli (fresh red, moderate quantity — less than rendang), and sometimes coriander seed. NO warming spices (no cinnamon, star anise, cardamom, clove — those are reserved for rendang and celebration dishes).
